Second recipe of the week! Yay! Today I have a recipe that I’ve been wanting to share on the blog but didn’t get a chance last month. These cookies are one of those you have to try at least once, not only are they super easy but also a great option for people looking for low carb treats that still satisfy the sweet cravings. These almond flour chocolate chip cookies only require easy to find ingredients and will be ready in 20 minutes from start till baked!
ALMOND FLOUR CHOCOLATE CHIP COOKIES
Paleo, keto friendly, vegetarian, low sugar
Yields 6 cookies
1/2 cup almond butter or tahini, creamy
1/2 cup almond flour
2 Tbsp coconut flour
3 Tbsp coconut sugar
1 tsp baking powder
1 Tbsp coconut oil
1 tsp vanilla extract
3 Tbsp almond milk
1/3 cup vegan chocolate chips
Pre-heat oven to 350F.
Mix all dry ingredients and then add egg, vanilla, milk and mix. Add the melted coconut oil and mix again until everything is sticky. Add chocolate chips and mix again.
Form small balls with the dough and spread on a baking tray with parchment paper. Bake for 15 minutes until lightly golden, make sure they don’t over bake or they will turn too dry.
Top with your favorite nut butter or spread and serve warm with a glass of almond milk or fruit.
