I’ve been dying to share this recipe on the blog for the last couple of weeks and I’m sure once you try this it will become a staple at home.
I don’t know who had the amazing idea of putting a sweet potato on a toaster, but thank you! For someone like me who doesn’t consume bread and a minimal amount of grains, having amazing and delicious options like this sweet potato toast is a game changer.
I’m not saying I eat low carb or anything like that, but I do avoid processed grains and overconsumption of carbohydrates, I’ve found that my body feels better and more balanced when I eat a higher fat diet, with the right amount of proteins and carbs.
When it comes to carbs, I really think that it’s all about complex vs refined. That’s why I love sweet potatoes, they are such an amazing source of energy while giving your body a boost of beta-carotene, micronutrients and antioxidants.
Sweet Potato Egg Toast (Grain Free)
1 small sweet potato
2 small organic eggs, poached or hard-boiled
Sea salt, black pepper, nutritional yeast
Herbs of choice
1 Tbsp tahini or Tahini Sunshine dressing
Cut sweet potato lengthwise, you should get about 3-4 thin slices. Put in your toaster on the highest temperature and toast for a few times until it starts looking a little toasted on the outside and soft on the inside. It took me 3 times.
Meanwhile, poach your eggs or cook as you wish.
Once the sweet potato is ready, place and top with avocado slices (or mashed), top with eggs, tomatoes, sprinkle with herbs and seasonings and don’t forget that touch of nutritional yeast.
Drizzle your toasts with a little bit of tahini or Tahini Sunshine dressing.
