Since I’m taking the semester off from school I finally have enough time to get back in the kitchen and working in person with clients. January is always so busy!
Today I’m sharing with you a recipe I posted on Youtube last week and people are loving it! The recipes on my youtube channel are in Spanish, but my lovely English speaking followers have been asking for it, so here it is on the blog too!
The recipe for this bread is super simple, oil/gluten free and really easy to make any time of the week. You only need a few different ingredients and it’s a perfect option if you’re looking for a vegan, low fat, gluten free bread.
If you’re not familiarized with the flavor of chickpea flour you might find it a little strong at first, but don’t worry, you can make epic toast or vegan sandwiches that will totally hid the flavor for you.
Gastrawnomica’s VEGAN Chickpea Bread – Gluten/Oil Free
Makes 1 loaf
2 cups Garbanzo Bean (Chickpea) Flour, sifted
2 cups Gluten Free All Purpose Baking Flour, sifted
1 1/2 Tbsp aluminium free baking powder
1/2 tsp baking soda
1 Tbsp flax meal
450 ml room temperature water
1 1/2 Tbsp apple cider vinegar
Mix all dry ingredients on a big bowl. Add water and vinegar and mix well until you have sticky dough consistency.
Transfer dough to a silicon mold or loaf pan with coconut oil to avoid sticking.
Bake loaf at 200ºF for about 40-50 minutes. The consistency will be soft and bready on the inside but will have a nice crust on the outside.
You can keep this outside on an air-thigh container for about 2 days and then I recommend to leave in the fridge to avoid it spoiling fast.
If the bread gets a little hard after a few days just reheat and it should be fine but I do suggest to eat it on the first 7 days max.
