I’m sorry I haven’t been posting much here on the blog but as you know this holiday season we all have so many social events, I’m back in Mexico for a winter break so I’ve been hanging out with friends and family almost everyday. So happy to be here right now!
The recipe I’m going to share with you today is not vegan. As many of you might know from my other social media, after 7 years on a plant-based lifestyle I decided I wanted to incorporate eggs and ghee into my diet. I’ve been treating amenorrhea on and off for my 7 years plant-based and after over a year on the back of my head I knew it was time to make a change.
This is one of my first recipes using eggs, and also some mini veggie frittatas I shared on my Youtube channel and Instagram, I wasn’t feeling comfortable sharing non vegan recipes before but I am now and this is part of my life now.
The recipe for this bread has eggs and ghee, but ghee can be easily substituted for coconut oil. I haven’t tried this bread with vegan eggs, so if you give it a try please let me know if it works!
Almond Flour Sandwich Bread
Yields 6 small loafs
1 2/3 cups sifted almond flour
1/3 cup coconut flour
1 Tbsp aluminium free baking powder
1/2 tsp baking soda
1/2 cup melted ghee or coconut oil
Mix all dry ingredients on a big bowl. Add eggs and melted ghee and mix well until you have a dough consistency and everything is well combined.
Let dough sit for 8-10 min while you preheat your oven and prepare your mold.
Preheat oven to 180ºC. I used a silicon mold but if you’re using another type of bread loaf put a little bit of oil or parchment paper as needed.
Transfer mixture into molds and top with sesame seeds. Cook for 30-40 min or until light golden. The bread should rise a little but it won’t rise twice its size.
Cool down and enjoy! These bread will last about a week if kept on an airtight container, preferably in the fridge after the third day.
