With the weather changing and winter season finally kicking Victoria, my cravings have changed a lot and all I want are some warm, nourishing meals like soups, stews and stir-fry.
Today’s recipe is super easy, (like you’ve probably noticed are most of my recipes) but so incredibly delicious and really high in plant protein, micronutrients and nourishing but light at the same time.
You will only need a few ingredients for this Veggie Tofu Stir-Fry and you can totally substitute the vegetables for any other ones you have at home or you prefer.
Oil Free Vegan Tofu Stir-Fry
1/4 cup onion, chopped or thinly sliced
3 large celery sticks, halved and cut lengthwise
1 medium zucchini, thin strips
1/2 red pepper, thin strips
1 small cauliflower, chopped or broccoli
1/4 cup San J Organic Tamari Soy Sauce
1/4 cup Kevala Organic Tahini (currently my favorite)
Spices/herbs: paprika, crushed red pepper, oregano, cumin, black pepper etc
1 lime, juice
1/2 block firm or extra firm tofu (not silken), in thin strips
Toppings: nutritional yeast and sunflower/pumpkin/sesame seeds
Start by heating a large pan. You can add sesame or coconut oil if you want but I didn’t use any. Add your veggies and sauté for 1 minute. Squeeze lime juice and Tamari and keep cooking until the vegetables start looking a bit cooked. Add the tofu strips.
Continue mixing and add your herbs and spices. These are super important because they really add a lot of flavor so don’t skip them! Add any other ones you like but I found those work really well.
Next add your tahini + 2 Tbsp water and mix until everything is covered and creamy. Remove from heat and serve warm. Top with your favorite seeds and nutritional yeast for extra flavor, nutrients and a little bit of crunch!
This will take about 15 minutes from the moment you start chopping your veggies to the end. It is so easy to make and seriously you wouldn’t believe how tasty it is.
