Today I want to share with you a super fun and ridiculously easy recipe for VEGAN Pumpkin Pie Protein Balls! You only need 4 ingredients and they taste like pure heaven!
It’s super easy to make and a perfect post or pre workout snack when you need something quick and protein rich but also delicious.
These little balls have a cookie dough consistency, which is my favorite part. They are soft and you can add some seeds or coconut outside to add some crunchy texture.
If you’ve been following my blog for a while, you’ve probably notice that I always use the same protein powder. I love Livwell proteins, they are vegan, organic, gluten free and the flavor is so nice! It took me a while to find a protein I felt comfortable using for the blog, I tried several vegan proteins and there are a few I can say worked ok, but the texture and flavor that these give is by far my favorite.
Last week I received a new pack of the monthly spices I get every month from RawSpiceBar. Basically you subscribe and they send you different spice blends every month, usually seasonal and always very unexpected! This time I got an “Un-pumpkin Pie Spice” blend that was so delicious and gave these little protein balls the perfect touch.
VEGAN Pumpkin Pie Protein Balls
Yields 6 small balls
2 Tbsp coconut flour
1 scoop Livwell vanilla protein powder
2 Tbsp Protein Plus, Roasted All Natural Peanut Flour, 32 oz (907 g) (or almond flour)
1 tsp pumpkin pie spice
Almond or soy milk as needed
Optional toppings: pumpkin seeds, shredded coconut, sesame seeds ..
Mix all dry ingredients in a small bowl. Add milk as needed, start with 1/2 cup and add more if needed until you have a cookie dough consistency.
Roll mixture into small balls and top with seeds, coconut or sprinkle with extra cinnamon!
