I hope you’re all having an amazing day! I’m loving the season so far, a bit too rainy but Fall just makes me feel so happy and grateful, plus all the amazing seasonal fruits and veggies make it even better!
Today I want to share a super quick, easy and very fallish recipe that won’t take much time and it’s also very versatile and packed with plant protein!
The tacos are very light since I’m using lettuce, but of course you can just play with the recipe and use corn tortillas if you want, or instead of making tacos just use it as a salad topping!
Gastrawnomica’s VEGAN Quinoa Edamame Lettuce Tacos
1 head of romaine lettuce, leaves
1 1/2 cups cooked quinoa
1/2 cup Edamame beans, cooked
1/3 cup frozen green peas
1 large zucchini, spiralized
1-2 tomatoes, sliced
1 sweet potato, baked and cut in strips
Smoked chipotle sea salt or regular sea salt
1/2 tsp curry powder
1 tsp dried parsley
Bake your sweet potato at 300F until soft.
Heat a large pan on medium heat and add 1 tsp sesame oil. Add cooked quinoa, Edamame and green peas. Mix and add curry powder, parsley and sea salt/pepper to taste.
Once the Edamame and green peas are soft, remove from heat and let it cool down a bit.
Prepare your plate with lettuce heads. Top with spiralized zucchini, quinoa mixture, tomatoes, baked sweet potato and drizzle as much Tahini-sunshine dressing as you wish! This is really what brings everything together and gives it lots of flavor! I sprinkled some smoked chipotle sea salt from RawSpiceBar and it was the perfect touch.
As you can see, this is such a simple, quick and easy recipe but seriously so flavorful and even though it feels light it is super nourishing, with lots of plant protein, healthy fats, micronutrients and so rich in vitamins and minerals!
