Hi everyone! It’s been so long, I’m sorry I’ve been lacking on blog posts but if you follow me on my other social media like Instagram, Twitter and Facebook you’ve seen I’ve been traveling a lot lately enjoying the summer vacations!
Right now I’m in Mexico visiting my family and loving the endless summer weather we have all year-long. When I came home, there were a bunch of amazing Ataulfo mangoes ready to be eaten and I couldn’t wait to make something with them!
This easy salad turned out so good I’m so excited for everyone to try it! It is super easy to make, low-fat, high fiber, super flavorful and seriously delicious. One of those meals you just HAVE to try before the summer ends.
Gastrawnomica’s Raw Mango-Jicama Salad
1 large jicama, peeled and cubed (about 3 cups)
3 small Ataulfo mangoes, cubed (around 2 cups)
2 cups tomatoes, in small cubes
1/3 cup fresh cilantro, finely chopped
1 large lime, juice
1 large avocado, cubed
1/4 cup red onion, finely chopped
Sea salt to taste
Mix all ingredients in a large bowl except for avocado. Mix well and let it sit 10-15 minutes prior to eating in your fridge so that all flavours get absorbed. Add avocado before serving and mix well again.
Serve on corn tostadas, romaine lettuce (to make tacos) or by itself!
As you can see, this is a super easy breezy recipe that will take you around 20 minutes to prepare. If you’re too hungry you can skip the fridge time but make sure you mix all the ingredients well so that all those delicious, fresh flavors combine well.
