A super easy, delicious and healthy ice cream idea that will take 5 minutes to make and you can enjoy at any time of the day! This is a perfect option for a post-workout meal/snack which will satisfy your needs for healthy carbs and plant-based protein!
Gastrawnomica’s Post-Workout Blueberry Tofu Ice Cream
2 frozen bananas
1/3 cup frozen blueberries
1/2 block silken medium soft tofu or non silken
3 Tbsp water or plant-based milk
2 kiwis, sliced
Freeze-dried durian, chopped cashews, brazil nuts or any other fresh fruits
Blend all ingredients until smooth and creamy. Serve with fresh fruit and toppings of choice. I used kiwis, freeze dried durian and dried mulberries.
Eat right away and enjoy!!
