Hey guys! Hope your week is going great! I’m so happy I’m back on track with blog posts and I’ve managed to share several recipes lately! Hope you’re all enjoying them!
Today I have an amazing recipe that I can’t wait for you to try. It is SO GOOD you wouldn’t believe it is so healthy! Because yes, healthy tastes good too!
Gastrawnomica’s AMAZING GF VEGAN NACHOS!!
2 brown rice flour tortillas, I used brand “Food for Life”
1 can back beans, unsalted
1 Tbsp melted coconut oil
Pico de gallo (tomatoes, onion, jalapeño, lime juice, cilantro and avocado)
1 tsp curry powder
1/2 tsp chipotle powder
Sea salt and pepper
Start by preheating your oven to 350ºF/180ºC.
Cut tortillas in 8 pieces and put on a cookie sheet, sprinkle curry and chipotle and drizzle with the coconut oil. Bake for 15-20 minutes or until golden and crispy. Make sure they don’t get burned!
Meanwhile blend your drained and rinsed beans with a little bit of water and sea salt, add water until creamy but don’t add to much. Transfer to a small pan and cook in medium heat for a couple of minutes until warm.
Prepare the pico de gallo and cheese sauce and reserve.
Remove chips from oven and let them cool down for a few minutes, serve on a large plate and top with pico de gallo, beans, cheese sauce and top again with pico de gallo.
