Good Monday friends!! Hope your week is starting great and you all had an awesome weekend. School has been keeping me busy as usual, but somehow I always find time to enjoy the lovely weather and spend time with friends. We need that balance right?!
Today’s recipe is gonna be a HIT at home! This super easy salad is so flavorful and fresh, a perfect meal for hot spring/summer day!
Lately I’m loving chickpeas more than usual and I’m amazed at how versatile they are. The combination of avocado, with cilantro and nutritional yeast, oh boy, bliss bliss bliss!
Gastrawnomica’s Chickpea-Avocado Lettuce Tacos
Serves 1-2 people
1 can chickpeas, preferably unsalted
1 medium avocado, cubed
1/4 cup cilantro, finely chopped
1 Tbsp Apple Cider Vinegar or lime juice
1-2 Tbsp nutritional yeast
Sea salt and pepper to taste
Romaine lettuce leaves
Rinse and drain chickpeas well, transfer to a medium bowl with the rest of the ingredients except for romaine lettuce and mix well until all chickpeas are covered with the avocado and nutritional yeast. Season to taste with sea salt and pepper.
Serve salad over fresh romaine lettuce leaves and sprinkle some nutritional yeast on top. You can also add cherry tomatoes but the salad is very nice and flavorful just as it is.
