Happy Thursday everyone! Week is definitely going by so quickly! Don’t you love that feeling when you’re so busy time just goes by flying?
I posted this meal on Instagram yesterday and now here it is! Full recipe, super easy, super flavorful but the best part? So healthy! These “ajillo” mushrooms are a ver popular meal in Mexico, although there are many different ways to make them.
Gastrawnomica’s Vegan Tostadas with Spicy “Ajillo” Mushrooms
2 cups sliced mushrooms
3 Tbsp finely chopped garlic
3 Tbsp finely chopped onion
1 guajillo chili, seeded, in strips or crushed dried chili, to taste
2 Tbsp sesame oil
3 Tbsp Tamari, preferably low sodium
Mashed black or pinto beans
Start by heating a skillet on medium heat and add your sesame oil. Add garlic and onion, sauté until golden. Add mushrooms, chili, Tamari sauce and cook until soft. Taste some of the mixture and add more Tamari if needed.
Serve your tostadas by heating tortillas on a non-stick skillet until they are no longer soft. Spread some of the mashed beans on each, top with mushrooms and avocado slices or guacamole.
