May is officially here! Wow, I can’t believe the winter is over! The whole year if flying, I finished my semester 2 weeks ago and now I’m back to school with summer classes!
Isn’t it amazing how our bodies start moving along with the weather and we crave more light and fresh things? This winter I was eating so much fat and pretty much all cooked meals except for a few raw veggies and it seems like now all I want is lettuce and berries!
Today’s recipe was pretty unplanned, just playing around in the kitchen and these “brownies” turned out so good! The sunflower seeds give it a really nice crunch and texture, dates make it sweet enough it doesn’t overwhelm your palate and consistency is just perfect!
Gastrawnomica’s Raw Vegan Sunflower Seed Protein Brownies
Makes 6 small squares
1 cup pitted dates
1/2 cup raw sunflower seeds
1/2 cup shredded, unsweetened coconut
1/4 cup coconut flour
1/3 cup cacao or carob powder
1/4 cup room temperature water
Blend dates using a food processor or vitamix until finely chopped, add coconut, carob and sunflower seeds and mix again until you have a crumbly mixture. Add water and mix again until really sticky.
Transfer to a bowl and add coconut flour, protein and mix well until you have a dough. Spread on a square pan with parchment paper and refrigerate for 30 minutes.
Cut in squares and enjoy! You can keep these in the freezer up to 1 month or in the fridge for 5-6 days, although they won’t last that much for sure!
