Hi everyone! This week I’m so excited to share with you another super easy but delicious 15 min meal that is perfect for lunch or dinner and will not only make you feel satisfied but it’s super healthy, high protein, micronutrient- rich and most of all super flavorful!
With the weather changing, I’m craving more raw foods and salads again, but always adding a balance with some cooked foods. This is a perfect example of how you can combine both and have a delicious meal!
Gastrawnomica’s Cannelini Bean & Veggie Lettuce Tacos – 15 Minute Meals
1 head romaine lettuce
1 can cannellini beans
1 medium tomato, chopped
1 cup chopped broccoli florets
1 Tbsp Tamari sauce
1 Tbsp chopped onion
1 minced garlic
2 tsp nutritional yeast
3 Tbsp tahini or 1/2 avocado
Start by sautéing your garlic and onion with a bit of water, add tomatoes, tamari and broccoli until lightly tender. Meanwhile cook your beans until warm.
Serve beans and veggies on a plate and top with nutritional yeast and other herbs/spices of choice. Add tahini (I used black) or avocado and simply fill your lettuce with the veggies + beans to form tacos!
