Happy Monday everyone! Hope your week is starting great and you all had a fun Valentine’s Day yesterday! I made these delicious bars a few days ago to share with my friends and oh my goodness, they were amazing! I love how easy to make they are but mostly, the incredible mix of flavors they have.
Lately I’ve been using a lot of Jusu products on my recipes, they are so full of flavor and so easy to just go get and save so many steps on my recipes, plus they taste amazing! The highlight on these bars is their Golden/Double Jointer almond milk, I know their products are not available outside Canada at the moment, but you can make it yourself!! I promise the combination of ingredients make these bars and the milk just pure liquid heaven!
Gastrawnomica’s Chocolate Covered Almond Protein Bars (Paleo, Raw Vegan, Low Carb)
Makes 6 medium squares
1 cup almond flour
3 Tbsp coconut flour
2 scoops Livwell vanilla protein powder
1/2 cup Jusu Bar Double Jointer Mylk**
Equal parts coconut oil, cacao powder and stevia drops to taste
Mix all dry ingredients in a medium bowl. Add milk and mix until sticky like a cookie dough. Transfer mixture to a square pan and freeze for 15 minutes.
Prepare your chocolate sauce by blending melted coconut oil, cacao powder and stevia or other sweetener of choice until smooth. Pour chocolate over cookies and leave in the freezer for 15 minutes.
Remove and let it sit a few minutes, cut in squares and enjoy!
**The Double Jointer Mylk is already sweetened and it is pretty much what gives so much flavor to the cookies, because it has a lot of spices too. If you can’t find Jusu products in your area, you can make your own almond milk using the same ingredients they use which you can see in the bottle.
