Gastrawnomica’s VEGAN Chocolate Chip Cookies (Gluten Free)
Yields 9-10 cookies
2 cups organic all-purpose flour (gluten free or not)
1 tsp baking powder
1/2 tsp baking soda
1/2 cup sesame or coconut oil, melted
1 cup coconut sugar
2 Tbsp flax meal + 6 Tbsp water
1 Tbsp vanilla extract
1 1/4 cup vegan chocolate chips
Served with my green chia pudding
Preheat oven to 180C.
Mix sugar, vanilla and oil in a medium bowl until you have a sticky mixture. In a separate bowl mix flour, baking powder and soda. Add “flax egg” to sugar mixture. Slowly add the flour blend until you have a sticky dough. Add chocolate chips and leave cookie dough in the fridge for 20 minutes.
Prepare a cookie sheet with parchment paper or silicon baking sheet. Shape your cookies, do not flat them down.
Bake for 30-35 minutes, or until golden and firm. Let them sit for an hour before serving.
