Wow! Can’t believe 2016 is officially here!
Hope you all had a wonderful time with your friends and family during the holidays, I sure did enjoy my time here in Mexico, had so much fun going out with my friends and enjoying my family’s company.
For the last couple of months, my favorite breakfast has been chia pudding. I can’t believe it took me so long to get into the chia pudding wagon, it is so versatile and easy to make!
Today’s recipe is just that, simple yet delicious at the same time. I love chia pudding because it’s not only healthy and nourishing, but so tasty and full of flavor! I will be sharing more chia pudding recipes in the future, since I’ve tried a couple of combos that are so yummy they deserve to be on the blog too.
Gastrawnomica’s Blueberry Chia Pudding
1 medium banana, ripe
1/4 cup blueberries
1/2 cup almond or other plant based milk
1/4 cup chia seeds
Toppings: mulberries, nut butter, dried coconut etc
Blend milk, banana and blueberries until smooth. Pour mixture in a small bowl and add chia seeds. Mix well and let it sit for at least 30 minutes or overnight.
Once chia seeds have absorbed the liquid, top with dried mulberries, almond butter, coconut and/or any other toppings of choice you want to add. I also served it along with my vegan banana bread.
