Hope you all are having a great start of the week, I’m so happy to be back home for the holidays, spending time with my family and having fun with my friends. It feels so good to be here and the weather is amazing (as usual), pretty much summer all year long.
Today I have this super fun and easy recipe that I posted a few months ago on Instagram and my Youtube channel but forgot to share it on the blog. It’s so great for when you want something easy and healthy but crave for something more “mainstream”. You only need a few ingredients and it is such an easy recipe that every kid and adult will love!
Vegan Tofu Nuggets
3/4 block firm or extra firm tofu (not silken), sliced in cubes
2 Tbsp Tamari sauce, low sodium
1/4 cup almond or soy milk, unsweetened
4 Tbsp nutritional yeast
1/4 cup brown rice flour
Pinch of turmeric
Mix tamari sauce and almond milk on a small bowl. On a separate bowl mix nutritional yeast, flour, turmeric and other spices/herbs of choice.
Dip tofu slices on the liquid mixture and then cover with flour mixture. Repeat until all your tofu slices are covered. Prepare a baking sheet with parchment paper or silicon baking sheet and put your tofu slices on top, no need to use oil.
Bake at 185ºC for 30 minutes or until crispy and golden. The texture is so amazing!
