Hope your week is going great and enjoying November’s beautiful fallish weather. Today I have a super quick, nutritious, super yummy and easy recipe that you and your family are seriously going to love!
This is one of our staple meals at home, even though not all my family is vegan (except for my mom and myself) they all love eating vegan meals and this is one of their fav things to eat! It is actually an example of what you get to eat on my detox programs, no need to starve when you can eat healthy and delicious food that will cleanse your body!
It’s not only really easy to prepare and you can have leftovers! But it’s also a great option for lunch or dinner.
Gastrawnomica’s Oil Free Quinoa Tacos Mexican Style ♥
Serves 4 people
2 1/2 cups cooked quinoa
1/2 cup cooked black beans
1 cup sliced mushrooms
1/2 cup chopped kale or spinach
1/4 cup chopped onion
1 Tbsp low sodium Tamari or Bragg’s Liquid Amino
Herbs and spices of choice: curry powder, turmeric, oregano, cilantro, basil etc.
Pico de gallo (tomatoes, onion, cilantro, lime juice, jalapeño pepper, sea salt)
Heat a pan and sauté the onions and mushrooms with a little bit of water and Tamari or Bragg’s Liquid Aminos. Once veggies start to become soft, add the quinoa, beans, kale, seasonings, herbs and mix well. Once the kale has gone soft your mixture is ready.
Prepare your tacos by heating corn tortillas con a skillet until slightly soft. Fill each tortilla with the mixture and top with chopped lettuce, guacamole, pico de gallo and tomato sauce.
This is such a fun, delicious and colorful meal you are seriously going to love! You can use sprouted wheat tortillas like Ezekiel if you don’t like/consume corn, or simply serve it on lettuce!
