Happy January 2014 everyone!
Yesterday I made a delicious and very simple raw pizza for my family. It is filled with healthy, easy to prepare ingredients and super flavorful! It is low in fat and oil free too, feel free to add any of your favorite toppings to have the best pizza party!
Gastrawnomica’s Semi-Raw, Oil Free Mushroom Pizza
1 cup almond flour, sifted
1 cup zucchini puree, peeled and then pureed (I used 2 small)
2 Tbsp flax meal
1/2 Tbsp fine herbs
pinch of salt
2 small portobello, sliced
2 Tbsp tamari
1/2 orange, juice
1 Tbsp ginger, finely chopped
1/4 cup homemade oil free tomato sauce of choice
Fresh spinach leaves
Nut cheese of choice**
Start with the crust. You can either dehydrate or bake this at low temperature. I dehydrated mine for around 24 hours. Mix all the ingredients until you have a dough and spread over teflex sheet until crispy. I flipped mine half way through.
Have your mise en place ready and marinate the mushrooms with tamari, ginger and orange juice for 10 min. Put everything in a small pan in medium heat, cover and let it cook for around 10 min, until the mushrooms start looking soft but not too long or they will become soggy.
Remove from heat and let it sit while you prepare the pizza. Start plating and top pizza crust with tomato sauce, spinach, mushrooms and nut cheese. You can add all sorts of things like olives, cherry tomatoes or whatever you have on hand.

Here’s another idea using the same pizza crust and tomato sauce, this time I used my creamy cashew cheese but over the sauce. Added olives, basil, oregano, rosemary and cherry tomatoes. It was for my family and friends, they loved it!
