Anyways, yesterday I made the most delicious, amazing and seriously incredible raw chocolate chip cookies! They are raw, oil free and gluten free (between many other things). The whole experience was amazing, I started my cookies from scratch, made my own chocolate chips, waited until they were ready the next day, than make my cookie batter, mixed it all together and “baked” (dehydrated) these goodies until my whole kitchen was smelling like freshly-baked cookies.
I gave these to my family and a couple of friends (including my little nephew) and there wasn’t one single person who just didn’t fall in love with them, they taste just like real cookies!
Gastrawnomica’s Raw Chocolate Chip Cookies
Makes 8 – 10 cookies
1 cup raw cashews, blended until you have a flour consistency
1 cup oat flour
1/2 cup date syrup (can use maple syrup)
1/2 tbsp vanilla extract
Pinch of sea salt
Water as needed
1/2 cup raw chocolate chips**
Mix all ingredients except chocolate chips in a medium-sized bowl by hand, starting with dry ingredients and then wet ingredients. Add 2 or 3 tbsp of water if the mixture is too dry. Stir in 1 cup chocolate chips.
Form into round cookies and press a few extra chocolate chips into the top of each cookie. Dehydrate overnight at 118 degrees.
** I made my own chocolate chips but it is very labor-intensive, so I recommend you look for vegan chocolate chips or use cacao nibs if you don’t find vegan chips.
Enjoy every single bite just like I did! Making these is not hard at all, what is hard is not to finish them all in one day! Totally addictive, gooey and guilt-free!
