Today I have a sweet recipe for you. Last week we celebrated my mom’s birthday and I made her this easy and delish mini chocolate cake.
Oil Free Mini Chocolate Cake
Makes 1 small
50 grs oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 tbsp cacao powder
120 grs sweet potato puree
5 – 6 Tbsp almond milk
Pinch of salt
3 packets of stevia or substitute with coconut sugar**
Preheat oven to 180ºC.
In a bowl mix sweet potato and add in 5 tbsp of milk, mix well to form a thick paste. Add dry ingredients into wet, mix to incorporate (add more milk if batter is too dry). Spread batter in a small pan. You might need a little bit of coconut oil for the pan, I used a silicone mold and didn’t need any.
Bake in oven for 20 – 30 mins or until skewer comes out clean.
**The cake is not too sweet, so taste the batter and add more sweetener of choice to taste, just keep in mind that too much might change cake consistency.
Fill cake with coconut cream, chocolate frosting or even nut butter! It’s not just for birthday celebrations, you can have a slice as a snack and just add fresh fruit and some almond butter!
