Sorry for not posting lately but I’ve been traveling and super busy now that I’m back in Mexico. If you want to see my pictures and recipes more often follow me on Instagram, I pretty much post daily and of many meals that never get to be on the blog.
This past weekend I traveled to Santa Monica for a course at M.A.K.E. which, in case you don’t know is Matthew Kenney’s restaurant and cooking school. I had an amazing time there and I was back in Mexico by Monday evening.
Since I ate so many nuts and raw desserts this weekend, my body was really craving for some green, light and fresh food again. So I’ve been drinking lots of green juices and smoothies, huge salads and fresh fruits. Finally feels like everything is getting back to normal.
Here are some of the meals I had during the week (that I posted on Instagram) with the recipe and ingredients.
Gastrawnomica’s SUPER Green Salad with Pea Dressing
2-3 cups organic greens (spinach, romaine lettuce, mesclun)
3 cups chopped jicama
1/2 large ripe avocado
1 1/2 cups steamed peas
Fresh herbs of choice
Turmeric (optional, I used it for its health benefits)
Put greens and jicama in a bowl. Blend avocado, green peas and a little bit of water until smooth. Add any seasoning to taste and fresh herbs like basil, cilantro, oregano or parsley. Whatever you prefer! Serve over salad and sprinkle a little bit of turmeric if using. Super easy, simple and delicious!
