A couple of months ago I decided to buy a vegan protein powder. I fell in love with bodyweight workouts, so to give an extra punch to my hard workouts I decided to increase my protein intake. After reading a lot about it, I finally decided to go with hemp protein powder.
I had no idea how I would use it, but it wasn’t as hard as I thought! I never actually used it for drinks, can you believe it? I actually loved using it in my vegan baked goodies! I did tons of things with it, even flat breads, but not worth to be in the blog.
In between all of these “creations”, I made these protein packed Apple Squares. Goodness if they are not good, the taste of hemp powder was totally hidden and they are lightly sweet, gooey and so freaking delicious. The consistency is what I loved the most, it’s in between a brownie and a soft cake texture. Plus, you get some good pieces of apples here and there, divine!
Like most of my recipes, they are not finished until you finally top them with either Tahini or any nut butter, seriously, it changes the final product completely.
Gastrawnomica’s Apple-Hemp Protein Squares
Makes 4-5 squares
1 ripe banana
1/2 apple, diced
3 Tbsp coconut sugar
1 cup oat flour
2 scoops hemp protein powder
1/4 cup applesauce, unsweetened
1/2 teaspoon baking soda
Tahini or other nut butter to taste
Preheat oven to 350ºF. I used a silicone, non-stick brownie mold. In a medium sized bowl mash bananas with a fork and add the rest of the ingredients. Mix well.
Pour mixture in mold and bake for 30 min or until a toothpick inserted in the middle comes out clean. Time may vary so keep an eye on the oven. Let it cool for 15 min and then transfer to a cooling rack. Serve with some tahini and bananas for topping, takes the whole recipe to another level! A must!
