If you’ve tried my Lavender cookies I have an amazing idea for you, using the same recipe.
After I made my cookies, I still had some of the batch in the fridge, that I decided not to dehydrate. I was wondering what to make with it, and I knew it was time to get creative. In just a few minutes, I had a completely different dessert just as good as the cookies!
What I love the most about my lavender cookies/cupcake is that nice and subtle touch of lavender and vanilla, and how every bite highlights the flavors. The “frosting” is really simple and nothing fancy or complicated. All fruit and goes perfect with the final product.
Gastrawnomica’s Raw Lavender Cupcakes with Vanilla “Frosting”
2 frozen (ripe) bananas / 2 plátanos (maduros) congelados sin piel
1 Tbsp dry Lavender flowers / 1 cda de flores de Lavanda secas
Vanilla to taste / Vainilla al gusto
Take the cookie mixture and prepare a cupcake mold with cupcake liners. Fill each liner with some of the mixture and freeze for 30 min, or until firm.
Before serving, blend frozen bananas with flowers and vanilla, until creamy. Remove cupcakes from freezer 10 min before serving and top with vanilla “frosting”.
Eat and enjoy right away. It’s a true delight!
