Hope you all had a fantastic weekend. I’m really enjoying being back home and spending time with my family and friends that I missed so bad. The weather is beautiful, super hot and warm like I’m used to, and I simply feel so blessed to be home.
Today’s recipe is something I never thought would taste so amazing. These cookies were my creation of the week and I instantly loved them! I also got my family’s approval so I’m sure you’ll like them too!
They are oil free and gluten free. But besides that, the best part is that they are super easy to make and have the perfect ratio of sweetness, vanilla and lavender (from my garden).
Gastrawnomica’s Raw Lavender Tea Cookies/ Galletas de Lavanda Crudas
Makes 15 small cookies/ Rinde 15 galletas pequeñas
3/4 cup dry or toasted coconut meat/ 3/4 taza de coco seco o tostado natural
1/3 cup oat flour/ 1/3 taza harina de avena
1 vanilla bean seeds / Semillas de 1 vaina de vainilla
1/2 cup homemade date paste / 1/2 taza de puré de dátiles hecho en casa
3 Tbsp dry edible Lavender flowers/ 3 cdas de flores de Lavanda secas (comestibles)
1/2 tsp maca powder / 1/2 cucharadita de maca en polvo
Start by blending the coconut in a high speed blender or food processor until you have a flour consistency. Try to make it as fine as possible but making sure it doesn’t turn into a butter. Add oat flour, maca powder, date paste, vanilla and lavender flowers.
Mix until it becomes a sticky dough. You might need to scrape down the sides once or twice, depending on what kind of appliance you’re using. Remove from blender and shape with a cookie cutter or your hands. Refrigerate for 1 hour before eating or dehydrate for a couple of hours (I did it) for a firmer texture.
Serve with fresh fruit, or eat them anytime you want. They are incredibly sweet and you get that beautiful touch of vanilla and lavender in your mouth in one bite!
