A few weeks ago, I shared a picture of this delicious, simple and easy meal I had on my Instagram account. This was kind of unplanned, and like most of the things I make, I was just playing around with what I had on my kitchen.
They are very simple to make, and you can always tweak the ingredients and season until you have the perfect flavor!
Gastrawnomica’s Zucchini “Fakettuccine” and Veggie-Balls
Veggie-Balls (nut/seed free):
1 cup raw cauliflower flowerets
1 medium carrot, chopped
1/2 italian tomato, chopped
1 large sun-dried tomato, soaked in water
1 medium celery stick, chopped
1 long chive, chopped
2 small white mushrooms
Parsley leaves and seasoning to taste
Zucchini “Fakettuccine” and Toppings:
1 medium zucchini, peeled lengthwise
1 tomato, sliced
1 teaspoon sesame seeds
1 cup baby kale leaves
1/2 cup green peas, raw or steamed
1 tsp dry oregano, rosemary etc
Put cauliflower in food processor until it starts to crumble. Add the rest of the ingredients until everything comes together. Roll mixture with your hands until you have around 6-7 small balls.
Dehydrate for 2-3 hours, just to make them firmer. You can also bake for 30 min at 180ºC.
Prepare plating by serving a bed of baby kale leaves, top with zucchini pasta, veggie-balls, tomato slices, peas and sprinkle with sesame seeds and oregano.
You can drizzle with tahini, lime juice or serve it with tomato sauce too. Serve and enjoy!
