Hope everyone’s week is starting well. Lately I’ve been posting many pictures on Instagram and Facebook, mostly of some of the things I’ve been enjoying lately while I embrace the pumpkin season! My kitchen has a serious overload of apples, pumpkin and squashes. I’m in love!
These two recipes that I’m posting today are very easy, hearty and nutritious. They are great options for dinner time and you have some leftovers, so it’s great if you want something you don’t have to cook twice and can be eaten another time of the week.
Veggie-Millet Kale Tacos
Serves 4 people
4-8 kale leaves, washed
1 cup Millet, rinsed
2 cups home-made vegetable broth
1/2 tbsp ground turmeric
1 celery stalk, thinly sliced
1 cup grated carrots and beets
2 italian tomatoes, sliced
1/2 recipe of Gastrawnomica’s Creamy Thai Dressing
Cook millet in vegetable broth and turmeric for around 15-20 min. Until liquids are absorbed and millet is fluffy.
Assemble your veggie tacos by first adding a layer of shredded vegetables, then tomato slices, millet mixture and finally a couple of tablespoons of the Thai Dressing. I added a thin slice of Nori sheets, but omit if you don’t want to.
Keep leftovers in the fridge for a couple of days and use during the week for a second and different meal!
Baked Butternut Squash Filled with Semi-Raw Salad
1 butternut squash, cut lengthwise
1 cup finely chopped romaine lettuce or spinach
1/2 cup steamed or raw peas
1 cup cherry tomatoes, halved
1 cup broccoli flowerets, steamed or raw
Oregano and Spices to taste
Lime juice for dressing or leftover of Gastrawnomica’s Creamy Thai Dressing (from recipe above)
Preheat oven at 190ºC. Remove seeds and bake squash in a cookie sheet, greased and covered with parchment paper. Bake for 35-50 min. Until soft.
Remove from oven and prepare your salad. The ingredients above is what I used for my simple semi-raw salad, but feel free to add whatever you like and have on hand. Fill squash with salad and serve while it still is warm. DIVINE.
