Hope your week is going wonderful! Here in Montreal it’s been kind of sunny, kind of chilly. You can definitely feel the Fall season coming.
Yesterday I had a little trip to the farmers market and I felt so inspired by all the new seasonal produce that I decided to make my first recipe of the season! Fall is probably my favorite season, the leaves changing colors, the air getting colder and of course, the pumpkin and squash madness!
These beautiful truffles will become your favorite “I have no time for fancy stuff” dessert. They are so simple to make and you only need 3 ingredients! Can you believe that? They are not too sweet, so feel free to add more sweetener if you want, but I love the natural sweetness that comes from fruit.
Gastrawnomica’s Vanilla, Chocolate and Marbled Truffles
Makes 4 truffles
2 ripe bananas (around 190 grs)
41 grs coconut flour
1 teaspoon carob powder
1 teaspoon vanilla powder or extract
**Add stevia or any sweetener of choice if batter it’s not sweet enough for you
Coconut sugar, shredded coconut, carob powder, quinoa puffs
Mash bananas until completely pureed, they MOST be ripe, if they are green or yellowish it won’t work. Add coconut flour and mix for a couple of minutes until it comes together. Separate mixture in two different bowls.
Add carob powder to one and vanilla to other bowl. Mix again until it resembles a cookie dough. I didn’t use any extra liquids, but if by any chance you need, add 1-2 tsp of water or almond milk.
Combine half of each mixture in a third bowl to make the marbled truffles. Roll in your hands, they won’t come together too fast, so just keep shaping with your clean hands. Put in a plate and leave in the freezer for 2-3 min, just so it gets a little bit firmer.
Roll balls in your favorite toppings. I used quinoa puffs for vanilla, carob powder and coconut sugar for marbled, and shredded coconut for chocolate. Leave in the fridge or eat right away like I did!
