Hope you’re having a super nice week so far. It still surprises me how fast time goes by!
Today’s recipe is so simple, even a kid can do it! I made these bars a while ago, when summer heat was on its highest here in Montreal, and I couldn’t think of anything except cold or frozen foods.
Gastrawnomica’s Raw Kiwi-Tahini Frozen Bars
1 mashed kiwi
1 Tbsp Coconut sugar
5 Tbsp Tahini, soft
In a small bowl combine kiwi and coconut sugar. Spread on a square plastic container. Top with soft tahini or other soft nut/seed butter of choice, until you have covered the kiwi completely, you shouldn’t have a very thin layer. Add more or less tahini depending on how thick you want that second layer to be.
Put in the freezer for 3 hours before cutting. Sprinkle with more coconut sugar or other favorite toppings you have!
As you can see, this is so easy you can make it anytime and with almost any fruit. It’s super creamy on top and sweet and a little acid from the kiwis underneath. Super yummy. Hope you try it soon and let me know what you thought. Simple, tasty and fresh!
