Hope you all had a wonderful weekend! Today’s recipe, if you can even call it a recipe, is super fun to make and tastes super good!
If you follow me on Instagram or twitter, you probably saw that last week I got a box from Let’s Do…Organic Coconut products. They are my all time favorite brand when it comes to coconuts. Everything is so good! I started buying their creamed coconut and shredded coconut years ago. Then, after changing my diet a little bit more, I tried their coconut flour, and since then I can honestly tell you, I prefer not to buy coconut flour if my health food store doesn’t have theirs. Have you tried their products? Aren’t they amazing?
You’ll be seeing tons of future recipes using some of the things they gave me, coconuts are one of my favorite things (I mean I’m from Mexico, how could I not like it?) to eat. Forever and ever.
Anyways, I love today’s recipe. I was inspired after seeing all these coconut goodness in my pantry, and wanted to use some of them at the same time, that’s how it happened.
It’s such a cool idea if you want to serve kids more fruit, and also, to enjoy a super simple, 5 min dessert that you can prepare anywhere you are! Just bring the ingredients to your work, picnic or friend’s house, and you’ll have an awesome fruit “donut” that looks so good, no one will say no to you!
The ingredients are simple, and you can substitute with whatever you have on hand or what you like the most. Any nut butter works fine and you can use berries, kiwis or any other fruit you prefer.
Gastrawnomica’s Raw Apple “Doughnuts”
1 big apple, sliced
3/4 ripe banana, sliced
3 Tbsp Tahini, soft
1 tsp Coconut Sugar
1-2 Tbsp shredded coconut, unsweetened
2 Tbsp toasted coconut flakes
Pinch of cinnamon (optional)
Prepare your apple in a plate. Simply slice them lengthwise, take out the center using a knife or an apple corer. Spread tahini over each slice, then top with banana slices, a tiny bit of coconut sugar, shredded coconut and repeat. I alternated the ingredients on each slice, using toasted coconut in some and grated coconut in others.
Before finishing your last layer, slice in half, so it will be easier to slice. Otherwise, everything inside will probably fall apart. Finish with your last slice and top with more goodies!
