Today I wasn’t going to post anything, but because I couldn’t post on Wednesday here it is! If you follow me on twitter or instagram, you probably saw I was moving out from my apartment. So this week I’ve been super busy, but everything is getting back to normal, thank goodness! So many changes at once is kind of overwhelming, but I’m beyond happy!
Anyways, I feel bad that I haven’t been posting many raw recipes, as I know many of my followers are looking for raw recipes, so today, for all of you gorgeous people, here it is! A super, maybe extremely simple, recipe for raw truffles! The ingredients are very easy to find, and it’s nut/seed free, plus, is packed with fiber!
Gastrawnomica’s Banana-Coconut Truffles
Makes 5 truffles
1 small ripe banana, mashed
2 full Tbsp coconut flour
2 Tbsp almond or other nut/seed milk
1/4 cup Tahini
Coconut sugar and grated coconut, for topping
Mix the mashed banana with coconut flour, add milk one tbsp at a time. The consistency should start looking sticky and crumbly. With clean hands, take around 1 tbsp of mixture and start shaping them and making balls. They are not at sticky as other truffles that use dates or dried fruitso be careful with it. Once they are ready, put in a plate and leave in the freezer for 10-15 min.
*Feel free to add some sweetener to the mixture if you want to.
Meanwhile prepare the toppings. Serve tahini in a small bowl and choose your favorite toppings. You can try with chopped nuts, chia seeds, carob/cacao powder.. whatever you want!
Take the truffles out and carefully insert a toothpick in the middle of each one. Dip them in the tahini and finally top them with coconut sugar etc.
Leave in the fridge a couple of minutes before serving or serve right away, but don’t put back in the freezer! Try serving them with fresh fruit, as they are super rich and fibrous, so if you serve them along with some fresh berries, apples, kiwis.. It’s gonna be a great combo!
