Today’s recipe is something you’ve never seen before. For real.
The other day I was at my health food store buying the usual, when I saw this “Green Pea Flour” from Bob’s Red Mill and I was like what is that? I hesitated for a couple of minutes but I knew I had to try it. Specially because it’s mostly protein and low in carbs, fat and calories. It sound pretty interesting, and who wouldn’t want some extra protein in their goodies right?
Anyways, I experimented a lot with it, for both savory and sweet treats and from all of my “experiments” these cookies were the best ones worth to be on the blog. The flour has a very peculiar flavor and I realized after baking with it many times, it works really good for savory dishes but these cookies taste super good, specially with that final touch of tahini!
Gastrawnomica’s Green Pea Flour-Matcha Cookies
Makes 7 cookies
65 grs green pea flour
3 tsp coconut sugar
66 grs applesauce, unsweetened (can substitute same amount with mashed banana)
1 full tsp matcha tea powder
1/2 tsp baking soda
3 tsp water
Tahini or almond butter for topping
Preheat oven at 350ºF. Prepare a cookie sheet with parchment paper.
Mix the dry ingredients in a small bowl by hand. Then add applesauce and mix. Add water 1 tsp at a time. It should look like a guacamole.
Take around 1 Tbsp for each cookie and bake for 10-15 min. Don’t let them burn, mine were a tiny bit more on the “about to get burn” side. Ups. Edges should start looking golden brown.
Remove from oven, let them cool down in a cookie rack and then serve with toppings. The cookies are not very sweet, feel free to add more sweetener if you want to eat them by themselves, but if you follow the recipe, finish by adding your favorite nut butter on top and more sugar won’t be necessary at all! They are a perfect, lightly sweet treat.
