Hope you all had a great weekend! I had a great time “fasting” from the computer and all electronic devises, I needed it so badly! Do you realize how much time we spent sometimes using the computer, ipad, ipods, cellphone, etc? So I decided I would take a most of my weekend off from all these things and spend my time outside enjoying life!
Anyways, today I have a super refreshing, simple and very tasty summer recipe. You can make this in less than 15 min and it can be part of a super healthy lunch or dinner. The freshness of the ingredients is perfect for these hot summer days!
All you need is fresh veggies and like always, you can give it a twist and adapt it with your favorite ingredients, swap the sunflower seeds for sesame, pumpkin or even hemp. Whatever you want!
Gastrawnomica’s Summer Salad Wraps
2 large Carrots, peeled and grated
1 Granny Smith apple, grated
3 large Iceberg Lettuce leaves
2 Tbsp raw sunflower seeds
1 large Orange
1/2 tsp Herbes de Provence
Pinch of Turmeric
In a serving plate, put the lettuce leaves and fill with carrots, apple, sunflower seeds and 1/2 orange in wedges. Squeeze the other half over the salad as a dressing, if your orange is cold even better! Top with herbes and spices, serve as it is and dig in!
For rolling the salad, simply take both extremes of the lettuce leaf and wrap it with the filling inside. Super easy, picnic and portable friendly and really refreshing.
