Yesterday I took a break from the blog but I’m back!
Last weekend I had the chance to go to my favorite farmer’s market here in Montreal. Jean-Talon is one of the biggest markets in Montreal, were all local farmers come daily with some of their amazing, and super fresh produce. The food is mostly conventionally grown, but there’s a small area for organic produce and you find pretty much anything you want!
So after buying way too many strawberries, I was wondering what to do with all of these! That’s when I got creative in the kitchen!
I made these cookies a few days ago, I was thrilled when I tried them, they are amazingly delicious and super easy and really healthy! Like, basically fruit and oats!! Seriously?
The beauty of imagination, who said healthy food is boring? Not in my kitchen!
Instead of doing the strawberry jelly thumbprint cookies normally have, I simply added one whole or half, (depending on the size) of the strawberries I had just bought on the market.
Gastrawnomica’s Strawberry Thumbprint Cookies
Makes 6-7 cookies
1 small ripe banana, mashed
37 grs oat flour
1/2 tsp baking soda
1 tsp coconut sugar
Fresh and ripe strawberries**
Tahini, coconut butter or almond butter to top cookies
Pinch of cinnamon
**If you don’t find small strawberries use raspberries, which are similar in size to the ones I used.
Preheat oven to 350ºF. Prepare a cookie sheet with parchment paper or teflex sheet.
Mash you banana in a small bowl. Add in the rest of the ingredients except for tahini and strawberries. Mix well. Take around 1 – 2 Tbsp of mixture and put over parchment paper. Once all your cookies are ready, put one or half a strawberry in the middle. Bake for 20 min or until they turn light brown.
Let them cool down for a couple of minutes and then serve. Feel free to top them with your favorite nut butter, I used tahini and the combination was lovely! You can also top them with some raw chocolate sauce.
