Anyways, back to food. Lately I became a cookie junkie. Gosh, they are so delicious!! It’s like, I found the basic staple ingredients, and now, with a few changes here and there, I can make completely different cookies and they all are so
Today I’m going to share 2 new recipes, yes you read fine, 2 recipes!! I’m feeling very generous today! Well, all the time, you can’t deny it! They are a must try and super quick and easy to prepare! You seriously don’t have to wait for the weekend because they will take you no time to prepare! Yumm!
Gastrawnomica’s Carrot Cookies
Makes 7 cookies
1 large carrot, peeled
1/2 large ripe banana
2 tbsp oat flour
1 tsp dried shredded coconut
1/2 tsp pumpkin pie spice or cinnamon
1/2 tsp baking soda
1 tsp water
Put your carrot in a food processor and with an “S” blade blend until finely chopped. Add banana and blend until mashed and combined with carrots. In a small bowl, add oat flour, baking soda and spices. Mix and add carrot mixture. Start mixing by hand until everything comes together, add 1 tsp water and keep mixing. It should look homogeneous and you can give it a try, it should taste delish!
In a greased cookie sheet, prepared with parchment paper put several spoonfuls of the mixture. Top each one with a little bit of shredded coconut. Bake in 350º for around 20-25 min. They will look soft on the top but should be ready on the bottom. Take out of the oven and leave in the warm tray for 10 min, allowing to cool down a bit. Serve warm!
Gastrawnomica’s Coconut-Banana Cookies
Makes 4 cookies
1/2 large banana
2 Tbsp oat flour
2 full Tbsp shredded dried coconut
1 1/2 Tbsp soft tahini
1/2 tsp baking soda
Pumpkin pie spice
Mix everything in a bowl, until you have a nice cookie dough consistency. Put mixture in greased cookie sheet, prepared with parchment paper. Bake at 350º for 15-20 min. Enjoy while warm! Delicious and very “coconutty”!
**Always feel free to add extra sweetener try choosing the most natural options you have like date syrup, honey, stevia or agave to taste. I didn’t use any additional sweetener, it’s all about choosing ripe fruit!
