Today’s recipe is a super colorful and flavorful summer “tostada” to die for! It is so simple to make and if you have some of my Turmeric crusts on hand even easier! I like to make these crusts all the time because they literally require 3 ingredients, are done in 20 min and are so versatile you can use them for pizzas, tacos and now even tostadas!
The toppings I used are pretty simple, but all together is total perfection. Tahini gives the tostadas that rich and creamy texture that makes the entire thing taste divine!
Gastrawnomica’s Carrot-Beet Tostada
2 of my Turmeric-Oat Crusts
2 medium carrots, peeled
1 medium beet, peeled
1 clove of garlic, minced
2 Tbsp Tahini per crust
1/2 cup cherry yellow tomatoes
1/2 cup baby spinach
1/2 tbsp herbes de provence
Blend carrots and beet in food processor until finely chopped. Add garlic, lime juice, herbs and keep blending. Put mixture in a small bowl. Add cherry tomatoes to food processor and 1 tbsp of carrot mixture, until you have a chunky tomato sauce.
Now assemble tostadas. Take you turmeric crusts and cover with enough tahini, then add several spoonfuls of the beet mixture, top with chunky tomato sauce, then spinach and finally 1 or 2 cherry tomatoes halved. Make sure your tahini is soft and top the entire tostada with some extra tahini. I finally finished with an extra touch of herbes de provence. Yum!
These are super delicious and colorful!! Ingredients by themselves are kind of simple, but all together is so amazing! It’s like a party of flavors in your mouth! A must try!!
