Around a month ago, I received a goodie box with some Madagascar Vanilla Beans from Simply Organic. I had no idea what I was going to make with them so I left them in the fridge for a while until I finally came up with an idea.
I wanted to make some cookies but didn’t knew which flavor or main ingredient to use, when suddenly I saw this forgotten jar of vanilla beans waiting to be used in my fridge. I knew I had to make vanilla cookies!
As you’ve seen before I don’t like using oils so vegan baking can be tough sometimes, more than usual. I’ve seen so many recipes that call for vegan shortening, vegan butter, faux this and faux that, what’s the point on substituting all the junk food with vegan junk food? Sigh.
Anyways, these are my super healthy version, addictive and so delicious vanilla cookies. You won’t resist eating just one, trust me! They didn’t last long enough.
Gastrawnomica’s Vanilla Bean Cookies
Makes 7 cookies
Seeds from 1 large vanilla bean
1 mashed banana, must be ripe
45 grs oat flour
1/2 tsp baking soda
1 tsp pumpkin pie spice
2 tsp water
Preheat oven to 350ºF.
Mash the banana with a fork and add oat flour, baking soda and spices. Start mixing until very sticky and it looks just like cookie dough. Add 2 tsp of water and keep mixing until well incorporated. Add vanilla seeds and mix again.
Take 1-2 tbsp of mixture and put in cookie sheet, prepared with parchment paper and lightly greased underneath. Bake for 20-25 min, until cookies start turning light brown and your house smells like heaven (at least that happened to me, my house smelled like vanilla!)
You must top them with Tahini! Oh my goodness, they’re tasty by themselves but with Tahini, gosh, they are insane!!! Trust me!
