Transformation of Food.
Yeah, that’s what I’ve been doing lately. I love experimenting with my food and the things I have available. I’ve never really like following recipes, because I actually never find something that suits exactly what I want. So last week I had some cooked quinoa with different vegetables and it was super tasty, but I was kind of bored of eating it like that, and that’s when the magic happened.
What could I do with it using what I had on my kitchen? Oat flour. Yes, the solution to all my problems. Whoever said diamonds are a girls best friend, she didn’t know oat flour.
Basically, I simply blended my quinoa and vegetables in my food processor and because it was already seasoned I just added a tiny bit of turmeric for an extra “punch”.
Gastrawnomica’s Quinoa & Millet Flat Burgers
Makes 10 patties and small bowl of quinoa & veggie mixture
1/4 cup uncooked quinoa
1/4 cup uncooked millet
3 italian tomatoes, finely chopped
2 cups chopped broccoli
1 beet, peeled
1 tbsp spices (turmeric, oregano, rosemary.. your choice)
1/2- 3/4 cup oat flour (as needed)
Cook your quinoa and millet in water o vegetable broth. Add spices and mix. Once all water is almost absorbed, add all the vegetables and finish cooking with quinoa and millet mixture.
Once ready, let it sit for a 10-15 min. Add 3/4 of quinoa-millet mixture to the food processor and add oat flour slowly until you have a dough consistency. Every thing most come together and be shapeable.
Preheat oven to 350ºF and prepare a cookie sheet with parchment paper.
With clean hands, shape your veggie patties and bake on both sides, around 20-35 min. Flip half way through.
Serve your patties with a side salad, sweet potato fries, inside a whole-wheat or gluten free burger bun, or topped with some tahini.. Ideas are endless, even add it to your salad as your main protein source. Delish!
Carrot-Avocado Mexican Salad
1 cup grated carrots
1/2 large avocado
2 limes, juice
1/2 -1 tsp chipotle chili powder I used Simply Organic’s
Mix grated carrots with 1 1/2 lime juice and chili powder. Top with avocado and a little bit more chili and rest of lime. Mix and dig in!
This is a perfect side salad for your flat burgers! And super refreshing for the summer.
