Hey everyone! Today I’m sharing a recipe for some cookies I made a couple of weeks ago and totally fell in love with them. They are super simple and delicious!
Gastrawnomica’s Tahini-Banana Cookies
**Raw version is possible, dehydrate overnight and omit baking powder
2 mashed ripe bananas
1/4 cup tahini
3/4 cup oat flour
1/2 tsp baking powder
1 Tbsp shredded dried coconut meat, unsweetened
1 tbsp pumpkin pie spice or a mix of cinnamon, nutmeg and ginger
Preheat oven to 400ºF.
Mix everything by hand until you have a beautiful doughy mixture. Roll 2 tablespoons of dough together and place on parchment-lined baking sheet. Lightly press cookie.
Before putting cookies inside, lower temperature to 350ºF. Bake for 20-30 minutes or until it starts turning a golden brown. Cool on baking sheet for several minutes, then move to wire rack.
Now enjoy and take a bite!
BTW… That thing you see in the middle of the cookie was a big piece of tahini and banana, SO good!
