Today I just have a quick post because I have a super busy schedule for the week! My finals are almost here so I’m freaking out a bit, but I don’t want to leave the blog behind, so here’s a new recipe for you.
This is a very simple “brittle” I made a few weeks ago, remember those chocolate brittles? Well this is my healthy version, packed with protein, healthy fats and tons of vitamins and minerals.
The perfect snack.
Gastrawnomica’s -Protein Rich- Hemp Brittle
3/4 cup dried unsweetened coconut meat
2 Tbsp raw cashew butter
1 Tbsp liquid sweetener or stevia
1/4 cup hemp seeds
1/2 tsp pumpkin pie spice (for topping)
Blend coconut in food processor until creamy, you might have to scrape down the sides 1 or 2 times. Once consistency is right, add the rest of ingredients except for hemp seeds. Put mixture in a bowl and add hemp seeds, mix by hand.
Put the mixture in a plastic square container and freeze until firm. Cut and serve. A perfect snack, dessert and portable food!
As you can see, it will take you less than 10 min to prepare it and less than 1 hr until it is hard enough to take out from the freezer. You can leave it there up to 1 week. But trust me, it won’t last that long!
