Hope you all had a wonderful weekend! It was a rough one for me, too much studying, but between those long hours of accounting I had time to make some of the best recipes I’ve ever done so far!!
I shared these pictures on Instagram and they were a total success! I post the recipes there sometimes, so you should follow me and you won’t miss anything! I’m thrilled about sharing these new recipes with you, they are extremely easy and trust me, irresistible.
I love the versatility of this recipe, because I did 2 small tarts and 3 cookies with just one batch of the recipe! It is beyond healthy, less than 5 ingredients (yeah, you heard right) and beyond delicious.
Gastrawnomica’s Quinoa “Apple Pie” Tart (or Cookies)
1/4 raw quinoa, cooked in 1 cup of water
1 medium apple, peeled and mashed in food processor
40 grs (around 1/4 cup) oat flour
1 1/2 tsp Pumpkin Pie Spice
1 apple, thinly sliced (I used a mandoline)
Raspberries or other fresh berries for topping
**You can add 1 Tbsp of your favorite sweetener but I didn’t use any (honey, agave, coconut sugar, date syrup..)
Preheat oven to 400ºF. First cook your 1/4 cup of raw quinoa. Meanwhile, peel and chop the apple. Put in food processor until mashed but make sure it’s not apple sauce!! Add pumpkin pie spice and cooked quinoa (make sure all water is absorbed and your quinoa has doubled in size). Blend until everything is incorporated and put in a medium bowl. Add oat flour in 2 batches, mixing by hand. Once you have a gorgeous “dough” transfer to a cookie sheet with parchment paper and shape the mixture in the size you want. I did 3 small cookies and 2 medium round tartlets.
Put oven temperature to 350ºF. Start baking and after 10 min, add the sliced apple to the big tarts, making 1 layer of apples over it. For the small cookies I used raspberries. Continue to bake until crispy, it will take around 20-30 min. Make sure to keep an eye on them!
Serve the tartlets with more fresh fruit and even add some banana ice cream on top!! This is super easy, overall it took me less than 45 min to have my final product and let’s just say they didn’t last long enough.
