This week has gone by so fast! I don’t know how can it be Friday already. Crazy!! Anyways, if you follow me on Instragram yo might have seen some random pictures of the things I’ve been enjoying lately. And some of them where so good I must share them here!
Mint Infused- Quinoa & Veggie Bowl
1 cup cooked quinoa (I cooked mine in mint tea instead of water or veggie broth)
2 carrots, peeled
1 broccoli stalk, chopped
1 tsp Turmeric (Don’t wanna brag about it, but this turmeric is the best thing ever)
1 tsp Herbes de Provence
1 large tomato
Chop your vegetables in a food processor until you have very small pieces. Cook your quinoa and before all water gets absorbed add the chopped vegetables and turmeric. Serve in a small bowl and add cherry tomatoes, sweet potato or other vegetables if desired.
You can eat it as it is, or fill your tomatoes with it! I took the flesh out and mix it with my quinoa, then add it back to the tomato with the quinoa mixture and topped with some herbes de provence for a final touch! Oh my goodness, it was so simple and it took me less than 20 min for a delicious, super nutritious dinner! Try it yourself, you’re gonna love it!
**Add salt if you’re not used to eating salt free.
This is another very similar bowl I did with both millet and quinoa. It was delicious, I added beets, carrots, broccoli, spices (no salt), celery leaves and cherry tomatoes!
Another new recipe I’m super excited about is for these yummy, simple and super tasty “pancakes” I did this morning! I still have to make some changes here and there, but so far they tasted just like banana bread!
Gastrawnomica’s Easy “Banana Bread” Pancakes
1 mashed banana
Oat flour (around 40 grs)
1 tsp Pumpkin Pie Spice
1 Tbsp tahini
Preheat oven at 400ºF. Mix all the ingredients in a bowl by hand. You must get a pancake batter consistency. Prepare your cookie sheet, by slightly greasing it and then put parchment paper. Change temperature to 350º.Put the mixture over (I got 3 big pancakes) and bake for around 10-15 min. Half way through I flipped mine, it was very easy to flip them because underneath the paper it was lightly greased. Continue baking until both sides are firm and ready, and the pancakes makes your house smell divine!
Serve and top with your favorite fruit! I topped mine with fresh raspberries and mashed strawberries! Delicious, simple & divine!
