How are you guys? Did you have a nice weekend? Mine was all about studying with friends, library hours and midterms. Yeah, that fun. Today I have my last midterm so I’m studying super hard, but took a quick break to write this down!
If you follow me on facebook, you might have seen the picture of my super easy, fast and delicious upside down apple cake, oh my goodness, this is so easy it’s insane! You know when you’re having one of those days when you want something sweet and a banana is just not gonna make it go away? Well I have good news, this is the perfect recipe for that!
You just need a couple of ingredients and almost no equipment! Great right?
Upside-Down Apple Cake
Serves 1-2 people
2 red apples, cut in thin slices, (you can use a mandolin or a very sharp knife)
1 extra large ripe banana (most be ripe!!), can use 2 small bananas instead
4 medjool dates, pitted and soaked 10 min
1/2 vanilla bean seeds (I used Simply Organic’s Madagascar Vanilla Beans, best thing ever)
3/4 cup dried mulberries (I used my favorites, from PRANA)
Cover a small bowl with plastic wrap. In a high speed blender, blend banana, dates, vanilla and spices until you have a nice sauce.
Now in the covered bowl, put a layer of sliced apples in the bottom, add some sauce and top with a couple of mulberries. Repeat. Repeat and repeat until the last layer is a thick layer of apple slices. Make sure you don’t add way to much sauce between layers. “Close” it with the plastic wrap left on the corners.
Leave in the fridge for 1 hour to make it really firm or if you’re super hungry and don’t want to wait more, dig in!
If you wait until it is firm, then simply take a plate and flip it over. Top with extra mulberries and enjoy every single bite. Easy, simple, nutritious and yes, delicious!
