Hope everyone’s week was as good as mine! I got a little flu during the weekend, but didn’t even last for more than 2 days, amazing!
So my facebook page has been super active and many people are anxiously waiting for several recipes from pictures I’ve been uploading. One of them is from my blondie bites! Please don’t be so impatience, all recipes will get here on time! But I have so many ready that I need to keep up.
Blondies, banana cookies (recipe coming soon) and raw date jam
Since I came back home, I’ve been super active in the kitchen! So finally here it is, one of my best creations ever, seriously, there has not been any single person (pretty much all non-vegans) that hasn’t fall in love with them. Too good to be true, and so easy too!
Anyways, here it is, and I assure you these little bites of heaven will be successful in your home too!
Gastrawnomica’s Blondie Bites
1 cup dried Mulberries
1 cup pitted medjool dates, soaked 10 min
1/4- 1/2 cup dried coconut flakes, unsweetened
Blend all the ingredients in food processor until you have a dough. If it is not sticky enough, add more dates or in case of using liquid sweetener add as much as needed.
Once you have a big dough ball, shape into desire size. I shaped mine in both bite size and medium size. Keep in the fridge for up to a week, they last a while and the flavor never fades, delicious!
Serve as desserts, enjoy as snack or even as part of your breakfast with a bowl of bananas!
As you can see as always, it is pretty easy to make and you don’t need to dehydrate the blondies unless you want to, they can keep for a while in the fridge. These are one of my favorite desserts ever, my mom, sister, family and a couple of friends that I’ve seen tried them and they couldn’t eat only one! That’s for sure!
