I’m finally back! Home sweet home. It feels so weird to be here after being traveling for the last couple of months. I’m very happy though, and many exciting things are happening right now in my life. I was looking forward for this and finally it’s here!
Costa Rica was amazing and I thought about writing a short post of my trip, but it would take forever, so here are just a couple of pictures from it. I can only say it was such a blessing to be there! So many adventures, new friends, new stories and new things I learned! It will always be a trip to remember!
Anyways, I’m so excited to be back because I get to make tons of new things in my awesome kitchen! If it was for me, I could spend all day experimenting and un-cooking some yummy things.
Today’s recipe is a celebration of Spring! I know it is not spring yet, but I mean, we’re getting there right? All the ingredients are pretty much available everywhere, if you have a problem finding jicama, replace it with daikon (if you like it raw) or with carrots.
Gastrawnomica’s Beet Salad Wraps
Serves 2-3 people
2 cups grated beet
1 1/2 cup grated jicama
1/2 medium cucumber, peeled and grated
1/2 cup celery, chopped
1 big garlic clove or 2 small
1/4 cup chopped red onion
1/2 large avocado, leave 1 tsp aside
Juice from 3 small limes
1/2 tsp paprika
1 Tbsp jalapeño pepper (optional)
1/4 cup cilantro
Nori Sheets (cut in medium rectangles)
Leafy greens like swiss chard, collard or lettuce
Put first 4 ingredients in a big bowl until well mixed. Using a high speed blender or food processor, blend the rest of the ingredients until completely smooth but a little chunky. Add mixture to salad and mix until completely homogenous. Add the avocado tsp to salad on top and mix a little. Let it sit for a couple of minutes and prepare your nori sheets or leafy greens.
Serve over plate with leafy greens as the wrap base or use nori for a nice asian touch! I personally liked it with the nori sheets a little bit more! These wraps are amazing, super refreshing and very flavorful!
It is super easy to prepare and could be an amazing salad to bring to picnics, work or even school! Just leave the nori/greens aside and wrap it until you start eating.
