Costa Rican Paradise

Hello everyone! So excited to be finally blogging! I haven’t got a really good internet connection since I came to Costa Rica, so it’s been hard to be online and also, with all this beauty who wants to be on the computer all the time right?

I wish I had more time to talk about my trip and everything I’ve been experiencing since I came last month, but briefly I just want to say I’m super happy, I feel like I’m on the right place, where I’m supposed to be. I feel so blessed for being able to be here, and enjoy all the opportunities I’ve been having lately; the people I’ve been meeting and all the amazing things I’m learning.

Yesterday I had a great snack during the evening, I was craving something refreshing after a long walk, and oh my goodness, this super easy and tasty salad came to me. Every single ingredient comes from the farm, how amazing is that? I feel like I’m living in paradise! If you don’t follow me onΒ facebook, you must! I’m always uploading pictures of some of my adventures here and what I do in the greenhouse, so if you want to be updated, you should like my page there, I’m more often there than here.

Anyways, so you want to know how to prepare this 5 min awesomeness?? Here it is!

Costa Rican Mandarin-Lime & Tomato Salad

1/2 mandarin lime

1 big tomato (ripe)

3 small cherry tomatoes, halved

1 small sweet pepper

1/2 large avocado, sliced lengthwise

3 Tbsp fresh cilantro, finely chopped

5 wild cucumbers, halved or 1/2 small regular cucumber

Cut the big tomato in thin slices, put over plate with cherry tomatoes. Top with avocado, sweet pepper thinly sliced, cilantro, cucumber slices and then drizzle with mandarin lime juice. You can substitute this delicious sweet and sour lime with half lime and half orange juice. Season to your taste. Serve and enjoy right away!


As you can see it is so simple, you can try this anytime! And it tastes so amazing you should do it soon!


What do you think about these amazing wild cucumbers? They grow everywhere in the farm! And they are super crunchy and delicious!


The little sweet pepper also came from the greenhouse! Oh my goodness they are the best peppers I’ve ever tried in my life! And we have so many, that we don’t know what do with them anymore! If you’re in Costa Rica, come grab some free peppers!

  2. I recently visited Costa Rica for the first time and fell in love! I understand how you feel, I knew that I was home as soon as I stepped off of the plane. I am currently working on a plan to move that way, I so miss the culture, the fruit, the beaches, just everything!
