I hope you all are having a wonderful week! Today I have a super simple and DELICIOUS recipe I made last month. If you follow me on facebook, you probably saw I was wondering what to do with some leftover juice pulp I had and guess what? I did something amazing.
Based on how successful my carrot cupcakes were, this time I thought about cookies, why not? They end up being far better than what I thought! If you made my PRANA cookies, then you now what I’m talking about, because these, just by themselves, are super good! I really liked the consistency, it was pretty similar to my carrot cupcakes and they are perfect for the holidays. Of course you can add some nuts like most of the raw vegan cookies recipes out there, and have even a more similar cookie texture, but why would I add nuts if they are just perfect like that? And the color is super vibrant and simply alive! Thanks to PRANA again for these amazing healthy products!
To make these cookies you’ll need two things, and that’s it!
Mulberry, Carrot and Goji Cookies
1 PRANA cookies recipe
Around 1 to 1 1/2 cups fresh juice pulp from beet, carrot and ginger juice
Mix everything either by hand or your food processor until combined. Give them shape and serve!
I basically ate all these cookies in one day, I mean, they are so tasty, I couldn’t say no. And of course healthy! Did I mentioned how nutritious they are? Take a look:
-Full of fiber, from all the juice pulp
-Vitamins and minerals from the PRANA mixture, specially from Goji Berries which according to the Beijing Nutrition Research Institute analysis, the fruit contains more beta carotene than carrots, and 500 times more vitamin C by weight than oranges, plus, goji berries also contains over 18 amino acids, 21 trace minerals, and substantial amounts of vitamin B1, vitamin B2, vitamin B6 and vitamin E.
