SO EXCITING. Well today, for this recipe I’m using several of them. PRANA sells my favorite mulberries and figs by far! I’ve tried many other brands and theirs are always my choice, I don’t really know why but they always taste better. In this recipe I wanted to make sure I used the dried fruits as the star, not co-star. I created a simple yet DELICIOUS “dough” that is perfect for shaping in balls and having some festive cookies!
And of course, the rest of the products were just as good as I expected. I tried their goji and golden berries too, as well as some delicious medjool dates that didn’t last long. And on the salty side their sulfite-free (obviously) organic sun-dried tomatoes, which that review will come up soon, with a yummy recipe! I actually made a couple of recipes using their products so keep an eye on my next blog posts for more awesome recipes thanks to PRANA.
“PRANA” Festive Cookies (Goji & Berries)
Yields around 8 small-medium balls
**This time the quantities are in grams, I wanted to be very specific.
26 grs goji berries (soaked for 30 min)
45 grs dried mulberries
40 grs pitted medjool dates (around 2-3)
30 grs goldenberries
Blend everything on your food processor or high speed blender until sticky. Roll the cookie “dough” in small balls and leave in the fridge while you make you pumpkin dip.
1 1/2 pumpkin puree (steamed or raw)
1/2 cup medjool dates
2 figs (soaked 15 min)
Blend everything on a high speed blender until smooth. Top with goji berries and mulberries. Now just serve both things together and enjoy! You can “dip” you cookies in the pumpkin! Delish!
