Today I just want to tell you about an old picnic I had with my friend Jimmy. This was back in August, we went to a beautiful park that is very famous here in Montreal, Mont-Royal. The day was beautiful and we had an amazing time, chatting for hours! I hadn’t seen him in a while, since I went to Costa Rica, where I randomly saw him while visiting an organic finca. How weird and cool is that right? How small is the World?
The salad was pretty easy and amazingly delicious. He brought a couple of things to through in on the last minute and voilá! It was SO GOOD! We both were a little bit worried about food combining, because we thought apple and avocado would be a no-no but we both had zero problems! And it was super good!
Did I mentioned Jimmy has been a raw foodist for more than 10 years? He has lived in more than 5 different countries, has traveled all around the globe! And he’s mostly fruitarian! He actually has an awesome book called “The Raw Food Traveler” and he tells all about his experiences while traveling, the book has so much info and details that if you’re interested you should totally check it out here and here! Anyways, I’ll post the recipe for the delish salad we had during our picnic, it is easy and really really tasty, and don’t worry about the avocado-apple combo, because with just half avocado I’m sure you won’t have problems!
Apple-Avocado Picnic Salad
1/2 box organic mixed greens (mesclun)
2 apples, spiralized and the rest chopped
1/2 avocado, cubed
1/2 cup alfalfa sprouts
1 Tbsp wakame, soaked and drained
2 zucchinis, spiralized
*Add cherry tomatoes, as much as you want to!
Mix everything together except for the avocado. When everything is well mixed add avocado cubes and mash it until everyhting is covered enough. Serve and enjoy!
**I’m gonna make this one more time when I get back home and I’ll take better pictures with a nice presentation because trust me, it is worth it! Super duper delish!
